Remove long-gone LDAP settings and add docs for a recent one.

Gone:
- `sts_expiry`, `MINIO_IDENTITY_LDAP_STS_EXPIRY`
- `username_format`, `MINIO_IDENTITY_LDAP_USERNAME_FORMAT`
- Username-Bind mode
