Use the targetPlatform field that BuildKit now records in provenance internal parameters to pick the replay target platform when the subject has no platform metadata. Older attestations without the field still fall back to the TARGETPLATFORM value found in the recorded LLB. Replace the on-disk blob rewrite in the index digest test with a provider wrapper, so the test no longer depends on content store internals such as fsverity-protected blobs.
