Julian Koberg 70713c0cf3 fix: bump Go to 1.25.11 (CVE-2026-42504) ...

The release image Trivy scan flagged the Go stdlib (v1.25.10) for HIGH
CVE-2026-42504, a MIME header decoding DoS, fixed in 1.25.11. Bump the
go directive in go.mod and the pinned GOLANG_BUILD_IMAGE accordingly.
